Pumpkin Chocolate Chip Muffins
I love seeing fall days like today. I like to think it looks like when fall is colliding with signs of winter. And as a child, I used to walk in the house on cold days like today and be instantly warmed by the smells of my mother cooking and baking. This is a family favorite.
Pumpkin Chocolate Chip Muffins
Ingredients
3 cups of flour (Used wheat flour.)
1¾ cups of sugar
2 tablespoons of pumpkin pie spice
2 teaspoons of baking soda
½ teaspoon of baking powder
4 eggs
1 can of pumpkin 15 oz. (Or around 2 cups worth)
1 cup of melted margarine (I just had butter in the house- so I used it…)
1-2 cups of dark chocolate chips
Directions:
Mix flour, sugar, pumpkin pie spice, baking soda and baking powder together in a large bowl. In a separate bowl, blend eggs. Add pumpkin and chocolate chips. Pour in dry ingredients and stir until just moist.
Bakes about 24 muffins.
Bake for 350 degrees for 20-25 minutes or until puffed and sprint to touch.
Enjoy… serve with hot chocolate or tea.
